Objectives Everyone who has any contact with food is recommended to acquire necessary knowledge. This knowledge leads to awareness of these people of their duties and responsibilities and results in fewer violations. The aim of this study was to evaluate the effect of education on knowledge and practice of Sabzevar restaurant operators. Methods This semi-experimental study was conducted in all restaurants of Sabzevar city under the supervision of local Restaurant Owners Association in 2009. A 3 day visit of the restaurants was performed. Knowledge and practice of restaurant operators were evaluated using questionnaire and visit forms respectively. Health standards were taught based on guidelines. Thereafter questionnaires were filled again and the restaurants were visited in 3 consequent days. Data analysis was performed using SPSS software.
Results Mean pre-education knowledge and practice score of restaurant operators were 51.1 and 68.06 respectively while these scores became 73.39 and 73.61 after education. Knowledge score of restaurant operators improved by 29% but their practice score was improved only 5.5%. There was a significant relation between education and knowledge before and after education.
Conclusion This study findings showed that although level of knowledge increased in restaurant operators, their practice did not increased proportionately. Therefore, supervision and control should be accompanied with education to improve their practice levels.
